Roasted Garlic Pinot Grigio Steamed Black Mussels
Ingredients

8 0z. Prince Edward Island Mussels (washed and cleaned)
1 head roasted garlic (cloves removed)
2 shallots diced
1 Hierloom tomatoe cut to 1/4 "dice
1 table spoon Chopped flat leaf parsley
1 tablespoon chopped basil
2 oz. olive oil
4 oz. Pinot Grigio
Preparation

Heat sauce pot to high temperature
Add oil , garlic, shallots, and tomato's
Add mussels and wine
Cover and steam until mussels open
Remove and arrange in plate , Add herbs and adjust seasoning
Drizzle sauce on top of mussels and serve
